I'm pretty new to Itch, and a few days ago I purchased the asset, sound effect, and music bundle without knowing the all-access pass existed. I was wondering if having all three bundles I could somehow upgrade to the all-access pass to gain access to any new content.

There’s a 30% discount on the All-Access Pass if you already own the Mega Bundle. However, other bundles don’t provide additional discounts.
If you decide to upgrade to the All-Access Pass, you can request a refund for the Sound Effects Bundle through Itch support. Just let them know you upgraded, and they should be able to help you out. (:
